  • Goat cheese or cottage cheese
  • Plain Greek yogurt
  • Honey
  • Fresh figs

  • Flaky sea salt

Is Goat’s Milk Easier to Digest?

If you have trouble tolerating dairy, you maybe able to tolerate goat’s milk. Goat’s milk can be easier to digest than cow’s milk because it has a lwoer level of the protein called alphaS1-casein land slightly lower lactose content. It’s also higher in short and medium-chain fatty acids than cow milk. These smaller fatty acids are broken down faster by stomach enzymes.

You can find yogurt, milk, soft goat cheese or blocks of goat cheese with flavors like white cheddar, pepper jack, mozzarella, etc. I love using soft goat cheese for making creamy, whipped spreads like the one used for this goat cheese fig toast.

Toast of choice (cranberry walnut from Whole Foods or CocoBakes gluten-free fruit and nut)
4 oz goat cheese or cottage cheese
2 tbsp plain Greek yogurt
12 tbsp honey
Fresh figs
Chopped walnuts
Honey or hot honey
Flaky sea salt

Instructions

In a small bowl, blend together goat cheese, Greek yogurt and honey.

Toast your bread and spread with the whipped goat cheese and slices of the fresh figs. Drizzle with honey and sprinkle with walnuts and flakey sea salt. Enjoy!
