Dairy-free Almond Ricotta Toast
The combination of the creamy honey-infused ricotta, fresh orange slices, and drizzle of honey taste similar to an orange creamsicle. It’s a unique sweet and savory combo that’s incredibly easy to put together, making it perfect for a quick afternoon snack or breakfast. Aside from being quick and easy, it also makes an eye-catching addition to serve at a brunch. My only recommendation for making this toast for a crowd is to assembly the toast just before serving or make a toast station where guest can assemble their own. This prevents the toast from getting soggy the longer it sits.
If you’ve never thought about pairing orange and ricotta or putting them both on toast, now’s the time to change that! The creamy almond ricotta balances out the slightly tart Sunkist® Navel Oranges and the sweet, less-acidic Sunkist® Cara Cara orange. The fat found in the almond ricotta also helps your body reap all the benefits of the antioxidants found in the oranges. You need healthy fats for the absorption of antioxidants, especially lycopene. Almond Milk Ricotta
This recipe calls for dairy-free almond ricotta. This is simply ricotta made from almond milk. You can purchase almond-milk ricotta at the store (I like Kite Hill), otherwise, you can easily make your own with raw almond (or cashews). If you have some extra time or you’re planning ahead, give this homemade almond ricotta recipe a try. If you’re not dairy-free regular ricotta will work just the same.
Common Substitutions
If you don’t have access to store-bought almond milk ricotta and don’t have the ingredients or patience to make your own, you have some options! Dairy-free Greek-style yogurt, regular Greek yogurt (if you tolerate dairy) would work great! Even plain cream cheese (dairy-free or regular) would work in a pinch! These options will still give you the creaminess and healthy fats need to balance out the flavors and boost the nutrition of the toast.

Navel Oranges
This variety of orange is probably what comes to mind when you think of this fruit. They’re arguably the most common type of orange with a refreshingly sweet and juicy taste and pleasant floral aroma. The slightly thick skin peels easily, revealing a bright orange, seedless interior. These classic oranges are available from November – June.
Sunkist® Navel oranges are an excellent source of vitamin C, with 90% of your daily value in one medium orange. They’re also a good source of fiber, folate, and potassium. These sweet fruits are a great source of quick energy from carbohydrates but are considered low-glyceric because of their high polyphenol and fiber content. CARA CARA ORANGES
While Cara Cara oranges may look like Navel oranges on the outside, cut into one and you’ll immediately notice its bright pink flesh. This beautiful pink hue comes from the naturally occurring lycopene. Lycopene is an antioxidant that can help protect your body from damage caused by free radicals. Excess free radicals in the body can create oxidative stress in your body. Research shows that the antioxidant properties of lycopene can help keep levels of free radical levels in check, protecting your body against some health conditions associated with elevated oxidative stress. Cara Cara oranges are also an excellent source of vitamin C. While all oranges contain vitamin C, Cara Cara oranges contain the most vitamin C out of all Sunkist® citrus varieties. One medium Cara Cara orange contains 100% of your daily vitamin C requirement. Aside from vitamin C, Cara Cara oranges, are a good source of fiber, folate and vitamin A. Orange Almond Ricotta Toast

Ingredients
2 slices sourdough bread (or crusty bread of choice)
1 Sunkist® Cara Cara orange
1 Sunkist® Navel orange
½ cup dairy-free almond ricotta (store-bought or homemade)
2 teaspoons of honey
Honey for drizzling
Instructions
Toast the bread in the toaster or however you prefer.
Slice the oranges into 1/4-inch thick rounds. Lay each round flat and slice off the peel. Set aside.
Place the almond ricotta in a bowl. Add in the honey and whip it together with a spoon. The ricotta gets creamier the longer you mix. If you’d like to make a large batch of the honey ricotta, I recommend using a food processor. This also makes it extra creamy.
To assemble the toast, place 1/4 cup of the ricotta mixture and spread it on the toast. Top with about four orange slices and a drizzle of honey.
Notes
Bread options: I love Coco Bakes gluten-free sourdough bread. Any crusty bread would be delicious but feel free to use any bread you prefer.
Vegan: To make this recipe vegan, use maple syrup or a honey substitute in place of the honey.

I loved this one! Was looking for something refreshing during my 2nd trimester. Also love the savory sweet aspect so once I toasted the sourdough, threw on kitehills dairy free ricotta, sliced the Cara Cara orange up (not as hard as it looked!) and added raw honey..
