These slightly sweet and nutty tahini banana oatmeal bars bring together the best parts of baked oatmeal and soft granola bars.
2 ripe bananas
1/2 cup tahini (sub any nut butter, the more drippy the better)
1/2 cup milk of choice
1 tsp vanilla
1 egg
1 1/2 cup rolled oats
1/2 oat flour (do not pack!)
3 scoops of collagen peptides
1 tsp baking powder
1/4 tsp sea salt
1/2 tsp cinnamon
1/2 cup dark chocolate chips
Preheat oven to 350ºF and line an 9×9 (or 12×5) baking dish with parchment paper.
Mash the bananas using a fork. Add to a bowl and stir the in egg, tahini, milk, and vanilla.
Add rolled oats, oat flour, collagen, chocolate chips, cinnamon, baking powder and salt; stir to combine.
Pour the batter into prepared baking dish and transfer to the oven. Bake for 22 to 25 minutes, until set.
Remove from the oven and let cool in the pan for 30 minutes. Use the parchment paper to lift the bars out of the pan and let cool completely before slicing into. Once cooled, slice into 12 bars. Store in the fridge for up to five days!
