These no bake apple cinnamon energy bites are to die for. They’re bursting with apple flavor and at 5 grams of protein per bite, they’re the perfect high protein snack for fall.

Ingredients

1 cup almond butter

2 oz dried apple chips

2 tbsp ground flaxseed

1 scoop vanilla protein powder (or sub 2 scoops unflavored collagen peptides + 1/4 cup almond flour)

2 tbsp maple syrup

1 tsp cinnamon

1/2 tsp sea salt

Instructions

In a food processor (or a powerful blender), pulse the apple chips into flour like consistency. Reserve 2 tbsp of the apple powder in a bowl.

In a large bowl mix together all the ingredients except for the two tablespoons of apple powder. Mix well. Add the water to the mixture until the dough forms into balls when rolled.

Roll the dough into bite-sized balls (it should make about 18) then roll lightly in the reserved apple powder and toss gently to coat.

Store in an airtight container in the refrigerator for up to 1 week, or in the freezer for up to 3 months.
