It feels like a thousand pound weight is off my shoulders. I presented my thesis Monday to my committee and I passed! I submitted my research to The Journal of Human Nutrition and Dietetics and it is now under review. Whether or not it’s accepted is up to the selection committee of the journal, but that has none of my worries. Right now, I am enjoying this moment of achievement and the joy that comes with making it to the finish line.

Finally, I feel as if I am able to take a deep breath and relax after this whirlwind of a year. I am completely committing myself to living in the present and enjoying this moment. Twelve months of dietetic internship and masters classes kept me going in full gear, non-stop. There were long days, time consuming assignments, waves of emotions and numerous tears. But I can now say I have my Masters in Nutrition Therapy. I sit hear smiling as I’m typing this and cannot help but feel so grateful for the wonderful support system who have given me this opportunity to follow my dream of being a dietitian and given me the motivation and encouragement for when times got tough. Thank you mom, dad and Ben for being this support system and standing by my side through it all. I love you.

Today’s post is for a simple Cherry and Plum Smoothie that highlights some of the best produce at this moment. Taking advice from Jessie, that plums and cherries are simply meant for each other, I’ve paired these fruits with some fresh ginger and warming cinnamon giving it a flavor combination that is something to celebrate!


Cherry and Plum Smoothie

Sweet plums and tart dark cherries come together with cinnamon and ginger for a slightly warming but overall refreshing dairy-fee smoothie.

Serves 1

Ingredients:

  • 1 cup frozen dark cherries

  • 1 plum (cored)

  • 5 oz carton almond yogurt (plain, unsweetened)

  • 1/2 inch fresh ginger (grated)

  • 1/4 tsp cinnamon

Instructions:

  1. In the blender combine all ingredients and enjoy immediately.
