I have to start off by saying, I cannot believe how wonderful the weather has been here in St. Louis. It’s been surprisingly mild for August, but I’m more than okay with that! The days have been bright and sunny hovering in the low 80s and dropping into 50s at night. I’ve been savoring every moment I have out in this beautiful weather since most of my days now are spent indoors sitting at a desk or moving around a hospital and I know this snip-it of perfection won’t last long. Today I’m sharing with you my Mahi Mahi with Ginger Peach Relish that was inspired by this mild weather. It’s a light meal that incorporates the fresh end of summer peaches and will have you have you savoring the last of the summer’s best.
Before I share with you this delicious dish, I want to reiterate my nutrition philosophy. Nourished by Nutrition is primarily a plant-based blog and most of the recipes can be categorized as vegetarian and/or vegan. However, I truly believe that all “diets” should be completely individualized and what works for one persons might not work for another. That being said, I do incorporate the occasional use of eggs, cultured dairy and wild caught seafood because that is what works for me. I do try to include substitutions in my recipes where I see fit, so that others with different preferences can enjoy the dishes as well. Now on to the recipe!
I chose to use wild caught Mahi Mahi, also known as dolphin fish, because it is a firm white fish that has a mildly sweet flavor. This ginger peach relish is a sweet yet slightly spicy accompaniment that brings about a warming sensation that is reminiscent of the late summer weather. If you don’t have access to wild caught Mahi Mahi, any wild caught fish will do. When selecting fish, try to opt for wild caught over farm raised. Mahi Mahi with Ginger Peach Relish
For the Relish
- 2 peaches
- 1 tbsp apple cider vinegar
- 1 tbsp lime juice
- 2 tsp fresh ginger
- 1 tbsp olive oil
- salt & pepper to taste
For the Mahi Mahi
- 1 lb wild caught mahi mahi cut into 4 4oz pieces
- 1 tsp oil
- salt & pepper to taste
Preheat the oven to broil.
While the oven is heating, prep the peach relish.
Wash the peaches and dice into small cubes. Set aside in a small bowl.
In a small bowl, combine apple cider vinegar, lime juice, olive oil, and salt and pepper to taste. Pour the mixture over the peaches and gently toss.
Once the oven is preheated, place the Mahi Mahi on a pan lined with foil. Brush the fillets with a teaspoon of olive oil and season with salt and pepper.
Place the pan on the middle rack of the oven and let broil for 8 minutes*.
To serve, place the fillets over fresh arugula and top with peach relish.
Recipe Notes*The cooking time will vary based on the thickness of the fish. The fish is done when it begins to flake. If you are unsure, you can always take it out , cover the pan with foil and let it sit for 2-5 minutes.
